A Hearty Ostrich Vienna

For 4 people














The Most Important Meal of the Day is Made Extra Tasty with Ostrich Viennas.

Ingredients

  • 500 grams Klein Karoo Ostrich Viennas (9 / 10 per pack)
  • 8 Small Pancakes
  • 4 Poached Eggs
  • 200 grams chopped fresh spinach
  • 2 leeks (or small red onions), chopped
  • 10 mL olive oil
  • 10 mL butter
  • 30 mL flour
  • 2 cup(s) low-fat milk
  • 3 mL salt and pepper
  • 30 mL Parmesan cheese

Directions

Method:
  1. Heat a dash of oil in a pan and fry the viennas or heat briefly in water.
Low-Fat Creamed Spinach:
Please note: These quantities will vary accordingly if you adjust the number of people to be served in the ingredients section above.
  • 200g chopped fresh spinach
  • 2 leeks (or small red onions), chopped
  • 10ml olive oil
  • 10ml butter
  • 30ml flour
  • 2 cups low-fat milk
  • salt and pepper
  • 30ml Parmesan cheese
Method:
  1. Fry the leeks in olive oil and butter for 3 minutes.
  2. Sprinkle flour over the leeks and stir for one minute.
  3. Add the milk slowly, whisking all the while to dissolve the flour in the liquid and eliminate any lumps.
  4. Bring milk mixture to a simmer, add the spinach and cheese, and season with salt and pepper.
  5. Cook covered over a low heat for 15 minutes.
Low-Fat Hollandaise Sauce
Ingredients:
  • 1 egg
  • 1 cup low-fat buttermilk
  • 15ml melted butter (optional)
  • 15ml lemon juice
  • 15ml cornstarch
  • 1ml red pepper flakes to taste
  • salt to taste
Method:
  1. Whisk all the ingredients except salt in a saucepan until smooth.
  2. Simmer over a low heat for 8 minutes, keep stirring to avoid lumps.
  3. Add salt to taste.
  4. Serve immediately.
