Chocolate Pudding

Makes 4 1/2-cup servings

Per 1/2-cup serving: 214 calories; 2.6 g fat; 0.6 g saturated fat; 10.8% calories from fat; 0 mg cholesterol; 5.1 g protein; 45 g carbohydrate; 28.4 g sugar; 2.8 g fiber; 72 mg sodium; 156 mg calcium; 1.8 mg iron; 0.4 mg vitamin C; 1 mcg beta-carotene; 1.7 mg vitamin E










Directions

This delicious old-fashioned chocolate pudding is sure to be a favorite.

  • 2 cups fortified soy- or rice milk
  • 3 tablespoons cocoa powder
  • 5 tablespoons cornstarch
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Combine all ingredients in a saucepan.
 Whisk until smooth.
Cook over medium heat, stirring constantly, until pudding is very thick.
 Pour into individual serving dishes and chill.
