“Un” Apple Pie

Makes 4 servings

Per serving (1/4 of recipe): 119 calories; 1.5 g fat; 0.1 g saturated fat; 11.1% calories from fat; 0 mg cholesterol; 0.4 g protein; 28.3 g carbohydrate; 22.1 g sugar; 3.5 g fiber; 5 mg sodium; 20 mg calcium; 0.4 mg iron; 8.5 mg vitamin C; 38 mcg beta-carotene; 0.5 mg vitamin E










Directions


  • 4 Granny Smith apples
  • 2 tablespoons lemon juice
  • 1 teaspoon canola oil
  • 1/4 cup apple cider
  • 2 tablespoons maple syrup
  • 1/4 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground cloves

Slice apples and toss with lemon juice in a large bowl. In a large skillet, heat oil.
Add apples and sauté for 2 minutes.
Reduce the heat to low, cover, and simmer for 5 to 8 minutes.
 Using a slotted spoon, remove apples from the skillet to a serving dish.
Add cider, syrup, lemon zest, vanilla, cinnamon, and cloves to the skillet.
Cook over medium-high heat until syrupy. Spoon over the apples.
