Peanut Butter Fingers

Peanut Butter Fingers


Basically a peanut butter oatmeal brownie with melted chocolate chips and peanut butter frosting – what’s not to love! This recipe came from the cook at my elementary school and has been a favorite ever since.

Element

1/2 cup butter, softened 
1/2 cup sugar
1/2 cup brown sugar
1 egg, beaten
1/3 cup peanut butter
1 cup flour
1 cup quick oats
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla


6 ounces chocolate chips

Topping:
1/4 cup peanut butter
1/2 cup powdered sugar
2 to 4 tblsp. milk

Method


1.    Preheat oven to 350 degrees. Lightly grease a 9x13 pan with butter and set aside.

2.    Cream butter and sugars. Beat in peanut butter, and then egg. Mix flour, soda and salt together and add to creamed mixture. Stir in oats.

3.    Spread into prepared 13x9-inch pan. Bake at 350 degrees 
for 20 to 25 minutes until puffed and nicely browned.

4.    While bars bake, prepare topping by mixing peanut butter, powdered sugar and milk in a small bowl and set aside.

5.    Remove pan from oven and sprinkle with chocolate chips and return to oven for 1 minute to soften chocolate chips.

6.    Remove pan and drop peanut butter topping in heaping tablespoons over soft chocolate chips. Using small offset spatula, swirl frosting into chocolate chips, being careful not to blend completely.

7.    Cool for at least 1 hour before cutting into bars.
