Beef & Roast Vegetable Lasagne



Prep Time: 20 minutes

Cook Time: 60 minutes

Total Time: 1 hour, 20 minutes

Ingredients


  • 2 capsicums, quartered and seeded

  • 2 medium zucchini, sliced thinly lengthways

  • 1 large eggplant, sliced thinly

  • 1 tbsp olive oil

  • 1 medium brown onion

  • 2 cloves garlic, crushed

  • 500g (1lb) lean ground beef

  • 800g (1 3/4lb) canned diced tomatoes

  • 1/2 cup beef stock

  • 1/3 cup tomato paste

  • 1 tsp dried oregano

  • 2 tbsp fresh basil, shredded

  • salt and pepper

  • 40g (1 1/2oz) butter

  • 2 tbsp plain flour

  • 400ml (13 1/2fl oz) milk

  • 1/3 cup (20g or 3/4oz) Parmesan cheese, finely grated

  • 375g (13oz) instant or fresh lasagne sheets

  • 1 1/2 cup (150g or 5 1/3oz) mozzarella, grated or torn into small pieces

  • 1/2 cup (30g or 1oz) Parmesan cheese, finely grated, extra

Instructions


  1. Preheat the oven to 220°C (425°F).
  2. Place the capsicum cut side down on a greased tray. Place the zucchini and eggplant on a couple of other greased trays and sprinkle with a little salt. Roast vegetables for approx 15 minutes or until soft and brown. Remove from the oven and peel the skin from the capsicum and discard. If the skin is being stubborn, return to the oven for a few minutes longer. Cut the capsicum into strips. Set the roasted vegetables aside.
  3. Meanwhile, heat the oil in a large frying pan. Add the onion and garlic and cook until the onion has softened. Add the mince and cook, breaking up any lumps, until browned. Add the tomatoes, stock, tomato paste, oregano and basil. Bring to a simmer and cook for 10-15 minutes or until the sauce thickens slightly. Season to taste. Set aside.
  4. Reduce the oven to 190°C (375°F).
  5. White sauce: Melt the butter in a saucepan over a medium heat. Add the flour and stir until well combined and foaming. Add the milk and stir until the sauce it comes to the boil and has thickened. Remove from the heat and stir in the Parmesan cheese and season with salt and pepper. Set aside to cool for 10 minutes.
  6. Grease a 7cm x 22cm x 29cm (9 x 11 inch) ovenproof dish. To assemble, spread thin layer of the meat sauce over the base and top with a layer of lasagne sheets. Spread third of the remaining meat over the lasagne sheets, add a layer of the roasted vegetables and sprinkle with pieces of mozzerella and a little parmesan. Repeat with layers finishing with a layer of pasta sheets. Top with the white sauce and sprinkle with mozzarella and parmesan. Cover with foil and bake for 20 minutes. Remove the foil and bake for a further 20-25 minutes or until golden brown and the pasta is tender. Remove from the oven and allow to stand for 10 minutes. Garnish with basil leaves and serve with garden salad and crusty bread.

Notes


Instant lasagne sheets are oven ready and do not require pre-boiling.

ROASTED GARLIC CHICKEN AND BABY VEGETABLES

Roasted Garlic Chicken and Baby Vegetables
You can use other seasonal mini vegetables-the smaller, the better. Gourmet restaurants serve 'em but anyone can. I find myself forgetting about the chicken and just eating these deliciously cute veggies by the spoonful!

Servings
  • 4 servings

Ingredients

  • 1 chicken, about 3 1/2 pounds, cut into 8 pieces
  • 20 small fingerling potatoes (or 10 large fingerling potatoes, halved)
  • 10 baby carrots
  • 10 baby zucchini
  • 10 baby red bell peppers
  • 3/4 cup olive oil
  • 2 tablespoons prepared crushed garlic or fresh, if unavailable
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1/2 teaspoon kosher salt



Directions

  • Preheat oven to 375 degrees F. Spray a roasting pan with non-stick cooking spray.
  • Rinse chicken and pat dry. Arrange in prepared pan.
  • Rinse potatoes, carrots, zucchini and peppers and place in a medium bowl. Add oil, garlic, paprika, garlic powder and salt. Stir to mix.
  • Spoon vegetable mixture into the roasting pan, arranging the vegetables under and around chicken. Make sure chicken skin is coated with oil mixture. Pour any extra from the bowl to cover the skin.
  • Bake, uncovered, at 375 degrees for 1 hour and 25 minutes, or until skin is slightly browned and crispy. Serve immediately.

Ingredients

Method


  • 1.Rinse okra in a colander under hot water.
  • 2.Heat oil in a 10-inch heavy skillet over moderately high heat. Saute onion for about 3 minutes. Add tomatoes (including juice) and chile, and boil. Stir the mixture for 8 minutes. Add okra and cook, gently stirring, until okra is tender, about 5 minutes.
  • 3.Stir in salt and pepper and discard the chile.

  • 2 pounds fresh green beans
  • ½ cup water

Method


  • 1.Rinse green beans and snap off tips.

  • 7.Remove from heat and let sit for 10 minutes to allow stew to thicken.

Makes 2 servings.












Ingredients:


  • 1 medium acorn squash (Australia: baby pumpkin)
  • 3/4 tsp./4 ml. plus 1/4 tsp./1 ml. sea salt
  • 1/2 tsp./2 ml. fresh ground black pepper
  • 6 Tbsp./90 ml. olive oil, plus extra for brushing
  • 2 garlic cloves, minced
  • 1 large portabella mushroom, chopped
  • 1 small onion, chopped
  • 2 tsp./5 g. fresh sage, finely chopped
  • Pinch red pepper flakes, optional

Directions:


  • 1.) Preheat oven to 450°F/250°C.
  • 2.) Trim off each end of the squash.
  • 3.) Stand the squash upright and halve lengthwise.
  • 4.) Scoop out the pulp and the seeds and discard.
  • 5.) Brush each squash half with olive oil, and then sprinkle with 3/4 tsp. salt and the black pepper.
  • 6.) Arrange cut sides down on a baking sheet lined with parchment paper.
  • 7.) Roast the squash until the flesh is tender and the edges are golden brown, approxi mately 25-35 minutes.
  • 8.) Remove from the oven, flip the squash halves over and set aside.
  • 9.) While the squash roasts, heat the olive oil in a medium saucepan over medium high heat.
  • 10.) Add the onions and garlic and sauté 2 minutes, or until the onions begin to turn translucent.
  • 11.) Add the mushrooms, sage, 1/4 tsp./1.25 g. salt and the red pepper flakes if using, and sauté until the mushrooms begin to soften, about 5 minutes.
  • 12.) Fill the roasted squash halves with the mushroom mixture and bake again for another 10 minutes.

Directions


Seitan is a high-protein wheat product with a meaty taste and texture.
Look for seitan in health food stores or the Asian food section of many supermarkets.

  • 1 medium onion, chopped
  • 2 tablespoons oil
  • 3 cups sliced mushrooms
  • 8 ounces seitan, sliced
  • 2 tablespoons flour
  • 1 1/2 cups cold water
  • 2 teaspoons soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 12 ounces dry soba noodles
  • 1 teaspoon salt

Sauté onion in a large skillet with oil until transparent, then add mushrooms.
Cover and continue cooking until mushrooms are brown, then stir in seitan.
In a small bowl, whisk flour and water together until smooth, then add to the skillet along with soy sauce, garlic, and black pepper.
Cook, uncovered, over medium-low heat until thickened.
Cook soba according to package directions, adding salt to the cooking water.
Top with seitan mixture and serve.

  • 1 cup chopped broccoli
  • 1 cup chopped onions
  • 1–3 garlic cloves, chopped

Spray jelly roll pan with vegetable oil spray.

Toss vegetables to coat.
Place vegetables in pan in a single layer.
Roast 10 minutes.
Take pan out of oven and spray tops of vegetables with vegetable oil spray.
Turn veggies and cook for another 5 to 10 minutes or until vegetables are tender.
Add beans and serve.

 This rich-tasting, creamy dressing has no added oil. Its creaminess comes from tofu.

  • 1 12.3-ounce package firm silken tofu
  • 2 tablespoons lemon juice
  • 3 tablespoons seasoned rice vinegar
  • 1 tablespoon cider vinegar
  • 1 teaspoon garlic granules or powder
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon salt

Combine all ingredients in a food processor or blender. Blend until completely smooth,
     1 to 2 minutes. Store any extra dressing in an airtight container in the refrigerator.

  • 1/2 cup vegetable broth, divided
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper

  • 16 ounces low-fat tofu, drained and crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried basil

Heat 1/4 cup broth in a skillet over medium-high heat. Add celery, onion, bell pepper, and carrots.
  Cook until softened. Add remaining 1/4 cup broth and kale. Cover skillet and cook until kale
    is wilted. Add tofu. Cook until firm and lightly browned. Add salt, black pepper, and basil.
