WEIGHT WATCHERS RECIPES | BUFFALO CHICKEN LASAGNA


INGREDIENTS

  • 12 Whole Wheat Lasagna Noodles, uncooked
  • 1 lb. skinless chicken breast, cooked and cubed
  • 3 cups spaghetti sauce (cheese blends are best)
  • 1 cup Texas Pete Buffalo-style Wing Sauce
  • 1 ½ cups water
  • 15 oz. nonfat ricotta cheese
  • ½ cup egg substitute
  • ½ cup blue cheese crumbles or pepper jack cheese

INSTRUCTIONS

Preheat oven to 350 degrees and lightly spray a 9x13 baking dish with nonstick cooking spray. In a small mixing bowl, combine ricotta cheese and egg substitute and set aside. In a different mixing bowl, combine water, spaghetti sauce, wing sauce and chicken. Spread approximately one cup of the sauce and chicken mixture across the bottom of the pan, and arrange four of the noodle over the sauce. Spread a layer of sauce over the noodles, and then spread a layer of the ricotta mixture over the sace. Add another layer of noodles and repeat the process until you end with a layer of just the sauce and chicken mixture. Cover with aluminum foil and bake for 60 minutes. Remove dish from the oven, sprinkle blue cheese crumbles evenly over the top. Place back in the oven uncovered and bake for an additional 15 minutes. Makes 9 servings!

No-Holds-Barred Lasagna Bolognese


Ingredients


For the Ragù Bolognese:

2 tablespoons extra virgin olive oil
4 tablespoons butter
2/3 pound ground lamb (or 85/15 ground beef)
2/3 pound ground pork
2/3 pound ground veal
4 ounces chicken livers, finely chopped (optional)
1 large onion, finely chopped (about 1 1/2 cups)
2 large carrots, peeled, and cut into 1/4-inch dice (about 1 cup)
3 large ribs celery, peeled, and cut into 1/4-inch dice (about 1 cup)
4 cloves garlic, finely minced, or grated on a microplane grater
1/2 cup fresh sage leaves, finely chopped
large pinch red pepper flakes (optional)
1 (28-ounce) can crushed Italian plum tomatoes, preferably D.O.P. San Marzano
1 1/2 cups dry red wine (white works fine as well)
1 1/2 cups whole milk
2 cups homemade chicken or veal stock (or 2 cups low-sodium canned chicken broth)
2 bay leaves
1 tablespoon Vietnamese or Thai fish sauce
1/2 cup heavy cream
Salt and freshly ground black pepper
1/2 cup minced basil or parsley (or a mix of both)

For the Ricotta Mixture:

3 cups home-made fresh ricotta (see note), or 3 cups store-bought whole-milk cottage cheese
Salt and freshly ground black pepper
2 large eggs
1/4 cup minced basil or parsley (or a mix of both)
For the besciamella:
2 tablespoons butter
2 tablespoons flour
2 cloves garlic, finely minced, or grated on a microplane grater
2 cups whole milk
1/2 pound dry whole milk mozzarella cheese, grated (see note)
1/4 teaspoon freshly grated nutmeg
Salt and freshly ground black pepper

To assemble:

Fifteen 4- by 8-inch sheets fresh rolled pasta, or 15 pieces no-boil lasagna noodles from 1 package (see note)
4 ounces parmesan, grated on a microplane grater (About 2 cups)
2 tablespoons minced basil or parsley (or a mix of both)

Procedures

For the Ragù Bolognese: Heat butter and olive oil in large Dutch Oven over high heat, stirring occasionally, until butter has stopped foaming. Add lamb, pork, veal, and chicken livers, and cook, breaking up meat with wooden spoon, until no longer pink, 7-10 minutes. Remove from heat, transfer meat to strainer set in large bowl, allow to drain, then transfer drained liquid back to Dutch Oven. Add onions, carrots, celery, garlic, sage, and red pepper flakes, and set over medium heat. Cook, stirring frequently, until vegetables are softened, but not browned, about 10 minutes.

Return meat to skillet, add tomatoes, wine, milk, stock, and bay leaves, and bring to a simmer over high heat. Reduce heat to low, partially cover, and simmer 2 1/2 to 3 hours, stirring occasionally, until liquid is slightly below level of meat, about 2 quarts of sauce total (you may need to add excess stock while cooking if your burner is cooking it too hot). A layer of fat may form on top during cooking, but do not skim it off. After cooking, remove bay leaves, add fish sauce and heavy cream and simmer until fat is emulsified, about five minutes. Season to taste with salt and black pepper. Remove from heat and allow to cool at room temperature for 30 minutes. Stir in parsley and basil. Bolognese will keep for up to 1 week in fridge, and will improve with time. Reheat until warm before using in lasagna.

While the ragù is simmering, make the ricotta mixture. Place ricotta in bowl of food processor or stand mixer fitted with whisk attachment and process/mix until smooth. Season to taste with salt and pepper. Add two eggs and minced herbs, and process/mix until incoroporated. Set aside at room temperature until ready to use.

Make the Besciamella: Heat butter in medium saucepan over medium-high heat until foaming subsides, stirring occasionally, about 1 minute. Add flour and stir with whisk until light blond in color and slightly nutty aroma develops, about 1 minute. Add garlic, and stir to combine. Whisking constantly, add milk in steady stream until fully incorporated. Bring to a simmer (mixture should thicken). Remove heat, add cheese and nutmeg, and whisk until fully melted. Whisking constantly, return to a simmer, remove from heat, and season to taste with salt and pepper. Set aside until ready to use.

Adjust oven racks to lower middle and lowest positions and preheat oven to 375 degrees. Place lasagna noodles in 13- by 9-inch baking dish and cover with hot tap water (or boiled water) and allow to soak for 10 minutes, changing water once during soaking time. Drain in single layer on clean kitchen towels, or paper towels. Cover with second kitchen towel or paper towels and pat dry.

To Assemble: Add 1/6th of meat ragù (about 1 1/3 cups) to bottom of baking dish and drizzle with 1/2 cup besciamella. Place three noodles in single layer on top of sauce (noodles will not quite touch each other; this is okay). Top with 1/6 of meat sauce, 1/2 cup besciamella, 1/3 cup Parmigiano, and three more noodles. Spread 1/2 of ricotta mixture on top of noodles with rubber spatula, top with 1/6 of meat sauce, 1/3 cup parmigiano, and three more noodles. Top with 1/6 of meat sauce, 1/2 cup besciamella, 1/3 cup Parmigiano, and three more noodles. Spread remaining 1/2 of ricotta mixture on top of noodles with rubber spatula, top with 1/6 of meat sauce, 1/3 cup parmigiano, and three more noodles. Cover with remaining 1/6 of meat sauce, remaining besciamella (about 1 cup), and remaining 2/3 cup parmigiano. Baking dish should be very full at this point.

Place foil-lined rimmed baking sheet on lower rack to catch drips, then place lasagna on upper rack and bake until edges are starting to crisp, and top is a bubbly, golden brown, about 45 minutes, rotating half way through baking. Remove from oven and allow to cool at room temperature for 10 minutes. Sprinkle with herbs, and serve.

Mexican Lasagna Recipe


Mexican lasagna casserole is a familiar favorite infused with robust flavors.

Ingredients

1 can (10.75 ounces) condensed cheddar cheese soup
1/4 cup milk
1 package (1 ounce) fajita seasoning mix, divided
1 pound ground beef
1 can (10.75 ounces) condensed golden mushroom soup
1/2 cup water
1 tablespoon chili powder
1 1/2 teaspoons crushed dried oregano leaves
12 (5- to 6-inch diameter) corn tortillas
Chopped tomatoes, optional
Sliced green onions, optional

Method 

In medium bowl, stir together cheddar cheese soup, milk and half the fajita seasoning, mixing until mixture is smooth.

In skillet over medium-high heat, cook ground beef, crumbling with fork, until browned. Pour off any fat.

Stir mushroom soup, water, chili powder, oregano and remaining fajita seasoning into ground beef, mixing well.

Increase heat and bring mixture to a boil.

Reduce heat to low and continue cooking for 5 minutes. Remove skillet from heat.

Place 3 tortillas in bottom of a shallow, 2-quart baking dish, overlapping slightly and covering bottom as much as possible.

Spread 1 cup beef mixture over tortillas in dish. Add another layer of 3 tortillas and another cup of beef mixture. Repeat layers with 3 more tortillas and another cup of beef.

Top with remaining tortillas. Spread cheese soup mixture over tortillas.

Bake at 350°F for 30 minutes, or until hot and bubbling. Let stand at room temperature for 10 minutes.

Sprinkle with chopped tomatoes and sliced green onions, if desired. Serve hot. Mexican Lasagna Recipe yields 6 servings.

Classic Lasagna



It's all about the layering when you make lasagna and is so easy when you start with a sauce already made and delicious.

What You'll Need

  • 3 cups ricotta cheese 
  • 12 ounces shredded mozzarella cheese (about 3 cups) 
  • 3/4 cup grated Parmesan cheese 
  • 2 eggs 
  • 1 pound ground beef 
  • 1 jar (45 ounces) Prego® Three Cheese Italian Sauce 
  • 12 lasagna noodles, cooked and drained 



How to Make It

1 Stir the ricotta cheese, mozzarella cheese, 1/2 cup Parmesan cheese and eggs in a medium bowl and set it aside.
2 In a 3-quart saucepan over medium-high heat, cook the beef until it's well browned, stirring often to break up the meat. Pour off any fat. Stir the sauce in the saucepan.
3 Spoon 1 cup meat mixture in each of two 2-quart shallow baking dishes. Top each with 2 lasagna noodles and about 1 1/4 cups cheese mixture. Repeat the layers. Top with the remaining 2 lasagna noodles, remaining meat mixture and the Parmesan cheese.
4 Bake at 400°F. for 30 minutes or it's until hot and bubbling. Let stand for 10 minutes.

Tip: 

To freeze, prepare lasagna but do not bake. Cover tightly with foil and freeze. Bake frozen lasagna uncovered at 350°F. for 1 hour 15 minutes or until hot. Or, refrigerate 24 hours to thaw. Bake thawed lasagna uncovered at 350°F. for 50 minutes or until hot. Let stand for 10 minutes.

How to Make Homemade Italian Lasagna Bolognese


Prep time: 1 1/2 hours

Cook time: 1 hour

Total time: 2-3 hours

Makes 12 servings

Ingredients:


For Meat Sauce (Bolognese Sauce)



  • 1 box (1lb.) of dried lasagna noodles, cooked al dente
  • 1 pound of ground beef
  • 1 pound of ground veal
  • 1 pound pork sausage, removed from casing
  • 2 tablespoons olive oil
  • 1 medium-sized onion, chopped
  • 4 garlic cloves, finely chopped
  • 1 celery stalk, finely chopped
  • 1 carrot, peeled and finely chopped
  • 1 (6oz) can tomato paste
  • 2 (28-ounce) cans crushed tomatoes
  • 1 cup red wine
  • 2 cups beef stock
  • 2 dried bay leaves
  • 1/2 cup fresh chopped basil or 2 teaspoons dried basil
  • Salt and freshly ground black pepper
  • 1 teaspoon sugar
  • Sprinkle of red pepper flakes (optional)

For Ricotta Filling

  • 1 (2 pound) container of whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 2 eggs
  • Salt and pepper

For Topping and Filling:

  • 1 block (16 oz.) mozzarella, shredded


In a medium size pot, heat the olive oil over medium-high heat. Add the sausage and sauté with a wooden spoon until crumbled and browned. Add the ground beef and ground pork. Sprinkle with a good amount of salt and pepper. Brown for a few minutes, breaking up the meat with a wooden spoon but leaving it very chunky. Once the meat is brown, add the onions, garlic, celery, and carrots. Give it another sprinkle of salt and pepper. Sauté until all the vegetables are soft, about 3-4 minutes.

Then, turn up heat and add the wine being sure to stir and scrape the brown bits off the bottom of the pan. Simmer for 2 minutes, turn down the heat then add the beef stock, the crushed tomatoes, the tomato paste, fresh basil and bay leaves.
Simmer uncovered over low heat stirring occasionally until the sauce thickens, about 1 hour.

  • While your sauce is cooking, preheat oven to 350°F










Then, cook pasta in a large pot of salted water for only about 5 min, (making sure it stays al dente). Remove from pot, drain in a strainer and rinse with cold water. Place the pasta in a in bowl and drizzle with olive oil to keep the pieces from sticking to one another. Set aside.

To make filling:

Mix ricotta, eggs, Parmesan, and parsley in a bowl until combined.  Season lightly with salt and pepper.

To Assemble:

Spray a 9 x 13 baking pan with cooking spray.  Spread a thin coating of the meat sauce on the bottom of the baking pan.
Cover with a row of lasagna noodles following the length of the pan and slightly overlapping them (like roof shingles).


Spread 1/2 of the ricotta mixture on top of the noodles, sprinkle with 1/3 of the mozzarella and a light sprinkle of Parmesan cheese.
Repeat with another layer of sauce, then layer the noodles in the opposite direction trimming them to fit into the pan.
Top with the remainder of ricotta cheese mixture and spread to cover the noodles, add 1/3 of the mozzarella, another sprinkle of Parmesan and another layer of sauce. Top the final layer with the noodles running the length of the pan. Top with some more sauce and another sprinkle of Parmesan cheese.
Cover with foil and bake for about 40 minutes or until hot and bubbling. Remove from oven. Uncover and sprinkle the remainder of the mozzarella over the top of the lasagna and put back in the oven for 10-15 minutes until cheese is melted and slightly browned. Remove and allow to cool for 20-30 minutes before slicing and serving.

Cook’s Tips


The sauce recipe will make enough for 2 lasagnas, so you can freeze the remainder of the sauce for some other meal (like pasta with Bolognese sauce), or make two lasagnas by doubling ingredients for the filling and noodles.

Lasagna can be assembled a day or two ahead of time. Don’t bake it just assemble, cover and refrigerate or freeze. When ready to bake, remove lasagna 30 minutes before baking from the refrigerator.  If you freeze the assembled lasagna, remove it 1 hour prior to baking.

Vegetables can be easily chopped in a food processor or with a hand chopper

If sauce seems too thick, add a little more beef stock.  If it’s too thin, allow it to cook longer.
